HOMEMADE GINGER BEER

The latest trend in mixology sees homemade ingredients at the basis of most famous signature cocktails from the best bartenders around the world.
Homemade preparations give the cocktail a touch of elegance, making it healthier, traceable and special! At low-abv we have studied a very simple recipe for you, using three basic ingredients and exploiting biological chemistry to make you have the best homemade Ginger Beer result!

Ingredients:
- 100g organic ginger
- 30g sugar
- 2l water
- 1 lime (optional)
Fermentation is a relatively slow process that will bring carbonation to your ginger beer, so arm yourselves with a little patience and you’ll have the best results within 1 week.
In order for fermentation to take place, you will need to use a ‘starter’ for fermentation, this is called ‘ginger bug’. To do so, grate a small piece of ginger in a bowl with a cup of water and 2 tsp of sugar. Stir and cover with a cloth for one day. The second day add more sugar and grated ginger to ‘feed’ the ginger bug and repeat the day after. Your ginger bug is ready.
My advice: you can keep feeding your ginger bug every day or two with ginger and sugar for as long as you want.
Once you have a starter for fermentation, you are ready to make your ginger beer. Boil 1 litre of water in a pot and add all of the sugar. Then grate all of the remaining ginger and set aside to cool. Once the mixture is cold add 2 tbs of ginger bug and stir. Add 1 litre of cold water to the mixture and stir well. Add the lime juice to your mixture and set aside for a few minutes to allow the mixture to sit. Use a cheesecloth to strain your ginger beer and pour it in your favourite containers. Leave your ginger beer in a dry and warm place for a couple of days to reach the desired level of carbonation.
My advice: use plastic bottles to check your ginger beer’s level of carbonation.
